Potato Pankackes.


Potato Pankackes

Grate the peeled raw potatoes with a fine grater. Squeeze dry in a towel.

Mix the potatoes with all other ingredients, save the oil. Chill for 10 minutes or so.

Heat the oil in a pan. Form pancakes from approx. 2 tablespoons of batter, press flat, and fry on both sides til golden brown.

Serve with applesauce and/or sour cream.
