Matzo Balls
Mix together matzo meal, potato starch, salt, and about 1/3 cup of water. Refrigerate mixture about 30 minutes.
Boil some vegetable broth. Roll into eight balls, and put in boiling broth. Turn down the heat, cover and boil for about 20 minutes. Preheat oven to 350 degrees, drain matzo balls, and bake them on a greased cookie sheet for ten minutes. If you want matzo ball soup, then throw them back into the pot with the vegetable broth, and you're done.
They can be chilled for later use. However, they tend to break apart if put into a hot soup when cold. Warm them up in warm water, or in a very low oven, before putting them in soup.
