Irish Eggs Benedict


Irish Eggs Benedict.

Once the muffin is ready, place option tomato slices on each side, and heap the hash on top.

Once the eggs are lightly poached, place them on top of the hash.

Pour the hollandaise sauce over.

Salt and pepper to taste. Serve with home fries, and/or bacon.
