Cajun-Style Rice Salad.
Cajun-Style Rice Salad
- 4 cups cooked rice
- 2 green peppers, chopped
- 2 stalks celery
- 16 oz can cooked red kidney beans
- 4 tablespoons parsley
- 1/2 cup salad oil
- 1/2 cup vinegar
- 1/2 cup water
- 4 teaspoons paprika
- 4 teaspoons prepared horse radish
- 1 teaspoon of onion salt
- 1/4 teaspoon of ground red pepper
In a mixing bowl, stir together rice, pepper, celery, beans and parsley.
Set aside. Combine salad oil, vinegar, water, paprika, horse radish,
onion salt and red pepper. Toss together to coat.
Serves: 12
Preparation time: 90 min (prepare a day in advance)
