Barbecue Sauce.

Barbecue Sauce

Heat oil in a saucepan.

Mince the onion, garlic and (optional) jalapenos. Cook in the oil, until the onions start to become transliucent.

Combine tomato paste, apple cider vinegar, whiskey or beer, and (optional) lime juice. Add to the vegetables.

If you wish to use chocolate, melt unsweetened chocolate in a double boiler. Alternately, use over-the-counter chocolate syrup, possibly reducing other sweetners.

Once sauce begins to bubble, reduce heat and simmer. Add the brown sugar. Cook slowly, stirring regularly, adding worcestershire sauce, salt, and (optional) chocolate.

After cooking for about 15-20 minutes, add honey to taste. Continue to simmer, stirring ocassionally, for a long long time!
